Ingredients:

  • 2 17.1 oz packages frozen puff pastry (thawed).

  • 1 1 oz package freeze-dried raspberries (finely ground)

  • 2 tablespoons unsalted butter (room temperature)

  • 8 oz cream cheese.

  • 6 oz fresh raspberries.

  • 1 egg white, beaten.

Get started

  • 1. Line a baking sheet with parchment paper.

  • 2. Unfold each sheet of puff pastry.

  • 3. Spread the butter evenly over one of the sheets of thawed puff pastry, then sprinkle generously with the freeze-dried raspberries. Starting on the long side, roll into a tight spiral, then freeze for about 20 minutes.

  • 4. Meanwhile, cut the remaining 3 sheets of pastry into roughly 3ā€x 3ā€ squares. Freeze for about 5 minutes.

  • 5. Once the pastry squares are chilled, slice a big X into the center of each square using a very sharp knife. Loosen up the center flaps, then tuck each outside corner under into the center (it should look like a little ear after itā€™s tucked under). Repeat with remaining squares and return to the freezer for another 5 minutes.

  • 6. Remove the raspberry spiral from the freezer and slice it crosswise into 1ā€ rounds.

  • 7. Remove the folded squares from the freezer and place about 1 tablespoon of cream cheese into the center of each. Place 1 raspberry into the corner of each fold (4 raspberries per pastry). Top each center with a sliced pastry swirl, then freeze on the prepared baking sheet for 10 minutes.

  • 8. Meanwhile, preheat the oven to 400ĖšF.

  • 9. Brush the chilled pastries with the beaten egg white, then bake for 15 minutes. After 15 minutes, lower the oven temperature to 375ĖšF and continue to bake until golden brown and very flaky, about 30 minutes.
